Tofu lettuce cups

Lettuce cups are an easy meal that is quick and delicious. You can easily use whatever vegetables you have readily available because the preparation is so versatile. Enjoy the crunchy cups with a cold beer.
 
It also works really well as a filling in an Asian inspired pita pocket- top it with sriracha mayonnaise and some hot sauce and you have an uplifted sandwich in a jiffy. Hope you relish it!

Serves 4

Ingredients

  • 2 tablespoons of sesame oil

  • 3 cloves of garlic, minced

  • 1 onion, minced

  • 1 tablespoon of grated ginger

  • 2 tablespoons of hoisin sauce

  • 2 tablespoons of dark soy sauce

  • 1 tablespoon of rice wine vinegar

  • 2 tablespoon of sriracha

  • 1 tablespoon of Maggi seasoning sauce

  • 6-8 basil leaves, chopped (alternatively, you can use green onions)

  • 1 head of butter lettuce

  • 1 block of tofu, finely diced

  • 2 cups of diced vegetables, carrots, beans, bell pepper, mushrooms (whatever is readily available)

  • salt and pepper to taste

  • For garnishing - toasted sesame seeds and crushed peanuts

Instructions

  • Heat the sesame oil in a pan over medium heat and add the vegetables, onion, ginger, and garlic with a pinch of salt and stir for a few minutes 

  • Add the diced tofu, basil, and all the sauces and vinegar 

  • Stir it and adjust the sriracha and soy sauce level to your liking

  • Take it off the flame

  • To serve, spoon a few tablespoons into the centre of a lettuce leaf and garnish it with toasted sesame seeds and crushed peanuts
