Sesame udon noodles

Inspired by all the Asian food I have eaten in my life, this is a comforting dish. It will remind you of an Indian Chinese style Hakka noodles, traditional Japanese udon noodles and the endless instant noodle options at every Asian supermarket. Hope you enjoy it!

Serves 2

 

Ingredients

  • 200 grams of udon noodles

  • 1 small onion- chopped

  • 3 cloves of garlic- chopped

  • 1/4 cup of julienned beans 

  • 1/4 cup of julienned carrots

  • 1/4 cup of julienned green capsicum

  • 1/4 cup of chopped scallions

  • 2 tablespoons of sesame oil (you can use vegetable oil instead)

  • 1.5 tablespoons of light soy sauce 

  • 1 tablespoon of green chilli sauce

  • 1 tablespoon of sriracha 

  • 1 teaspoon of dark soy sauce 

  • 1 teaspoon of Maggi seasoning sauce 

  • 2 tablespoons of roasted black and white sesame seeds

  • A pinch of white pepper

  • A pinch of salt 

Instructions

  • Follow the instructions on the packet and put the udon noodles to boil

  • Heat the sesame oil in a pan over medium heat

  • In about a minute, add the garlic and allow it to brown

  • Once fragrant, add the onions 

  • After cooking them, add all the vegetables and the scallions and stir well

  • After two minutes, lower the flame and add all the sauces and mix 

  • You can increase the flame back to medium now

  • Check on the noodles

  • Once the noodles are ready, toss them with the vegetables

  • Taste it and only then add the salt and pepper according to your liking

  • Feel free to add more sriracha or green chilli sauce if it is not spicy enough for you

  • Sprinkle the roasted sesame seeds over the top and serve
