Penne alla Vodka
Serves 4
Ingredients

1 small onion

3 cloves of garlic

3 tablespoons of olive oil

5 tablespoons of butter

3/4 cup of vodka
-
3/4 cup of heavy cream
-
1 sprig of basil
-
1/2 a cup of chopped basil

1 a cup of grated parmesan cheese
-
2 cups of quality chopped tomatoes (pureed)

500 grams of penne pasta
-
Sea salt
-
Chilli flakes
Instructions

Heat the olive oil and 2 tablespoons of butter together in a pan over medium heat

Add the onions and garlic
-
In about a minute remove the pan from the flame and add the vodka
-
Put the pan back over the flame and reduce the vodka (will take about 4-5 minutes)

Now add chilli flakes - I like to add about a teaspoon

In 2 minutes, add the pureed tomatoes and the sprig of basil
-
Let the sauce reduce for about 7 minutes

Follow the instructions on the box and boil the pasta separately

Once the sauce thickens up, add salt to taste and remove the basil sprig

Now add the heavy cream and stir well

Reduce the flame

In a minute, add the remaining butter and half the parmesan cheese

You can more chilli flakes, cream and cheese if you like it spicier or heavier

As soon as the pasta is done, coat it in the sauce

Garnish with chopped basil and parmesan
