Carrot cake
Serves 6
Ingredients

1 cup of all-purpose flour

1 teaspoon baking powder

a pinch of salt

2 teaspoons of cinnamon powder

1/2 a cup of brown sugar

1/2 a cup of granulated white sugar

1 teaspoon of vanilla essence

2 eggs
-
2 cups of grated carrots
-
1/2 a cup of vegetable oil

5 tablespoons of The Gourmet Jar walnut cinnamon honey
Instructions

Preheat the oven to 175’C

Sieve and mix all the dry ingredients in a bowl.

In a separate bowl, mix the oil, vanilla and eventually add and mix the eggs too.

Combine both the mixtures and pour it into a lightly floured cake tin (or one lined well with parchment paper).

Place the filled tin in the oven for approximately 30-45 minutes. Once it looks done, insert a fork to check if it’s thoroughly cooked. A clean fork means its ready :)

After allowing the cake to cool, put it on a cake stand, drizzle the honey over the top and enjoy!
Adjustments and additions
-
A handful of chopped walnuts or pecans can be added to the cake batter for a crunch, even raisins work very well.

If you want to avoid the honey drizzle, add 1/4 of a cup of brown sugar to the cake batter.
