Carrot cake 

Serves 6
Carrot cake with cinnamon walnut honey.j

Ingredients

  • 1 cup of all-purpose flour

  • 1 teaspoon baking powder

  • a pinch of salt

  • 2 teaspoons of cinnamon powder

  • 1/2 a cup of brown sugar

  • 1/2 a cup of granulated white sugar

  • 1 teaspoon of vanilla essence

  • 2 eggs

  • 2 cups of grated carrots

  • 1/2 a cup of vegetable oil

  • 5 tablespoons of The Gourmet Jar walnut cinnamon honey​​​

Instructions

  • Preheat the oven to 175’C

  • Sieve and mix all the dry ingredients in a bowl.

  • In a separate bowl, mix the oil, vanilla and eventually add and mix the eggs too.

  • Combine both the mixtures and pour it into a lightly floured cake tin (or one lined well with parchment paper).

  • Place the filled tin in the oven for approximately 30-45 minutes. Once it looks done, insert a fork to check if it’s thoroughly cooked. A clean fork means its ready :)

  • After allowing the cake to cool, put it on a cake stand, drizzle the honey over the top and enjoy!​

Adjustments and additions

  • A handful of chopped walnuts or pecans can be added to the cake batter for a crunch, even raisins work very well.

  • If you want to avoid the honey drizzle, add 1/4 of a cup of brown sugar to the cake batter.
